This Month's Dish: Kale and Pasta

1 medium onion, sliced
2 Tbls olive oil, divided
8 garlic cloves, thinly sliced
3 cups uncooked penne pasta
6 cups chopped fresh kale
½ tsp salt
Shaved Parmesan cheese, optional
In a large skillet, cook onion in 1 tablespoon oil over medium heat until onion is golden brown, 15-20 minutes, stirring frequently.
Add garlic; cook until fragrant.
Meanwhile, in a large saucepan, cook penne according to package directions. In a large pot, bring one inch of water to boil.
Add kale, cover and cook until tender, then drain.
After draining penne, drizzle with remaining olive oil.
Add salt penne and kale into the onion mixture, heat through.
Add Parmesan if desired.
