Summer is a fantastic time to enjoy a bounty of fresh, flavorful vegetables. Eating seasonally means you're getting produce at its peak ripeness, which often translates to more nutrients, better taste, and sometimes, a lower cost. Here are some common seasonal vegetables available in summer and their fantastic benefits:
Tomatoes: High in Vitamin C, potassium, and folate. They are particularly rich in lycopene, a powerful antioxidant linked to reduced risk of heart disease and certain cancers. Tomatoes also have a high water content, aiding in hydration.
