In the United States, kale is generally harvested from August through late October. Due to its hardiness and long shelf life, kale can often be found year-round in many grocery stores. Choose kale with small or medium sized leaves-they are the most tender and have the best flavor. Great for salads, smoothies, stir-fries and soups. Kale can be sautéed, roasted, baked or enjoyed raw.
