Ingredients
8 large chicken thighs
½ cup Marsala wine
8 ounces sliced baby bella mushrooms
2 cloves garlic, chopped’
½ teaspoon chopped dried thyme
Preparation
Step 1
Preheat oven or grill to 375 degrees for medium-high heat.
Step 2
Making four pieces of foil, place two chicken thighs onto each piece of foil, large enough to wrap the chicken. Place an even amount of wine, mushrooms, garlic and thyme into each pocket.
Step 3
Wrap the pocket tightly closed, turning the edges of foil together in a tight fold.
Place on the hot grill or oven and cook for 20 to 30 minutes, or until the chicken is cooked through.
Step 4
Season with salt and pepper if desired. Can be served over rice, noodles and potatoes.
