About the Recipe

Ingredients

  • 6 eggs

  • ½ cup cooked spinach, water removes

  • ⅓ cup cooked and crumbled bacon’

  • ⅓ cup cheddar cheese shredded

  • ¼ cup diced tomatoes

Preparation

Step 1

Preheat oven to 375.


Step 2

Coat 6 cups of the muffin tin with cooking spray.


Step 3

Crack eggs in a large bowl. Add spinach, bacon and cheese. Divide mixture evenly between the six muffin cups.


Step 4

Bake 15-18 minutes or until eggs are set.


Step 5

Remove from oven, top with tomatoes and serve immediately.
